Harvest: Harvesting is carried out meticulously using the manual method. The Syrah variety is harvested at the end of September, while the Sumoll is selected in mid-September.
Fermentation: A light, skin maceration takes place for 2 hours, with the purpose of extracting both colour and aromatic precursors that enhance fruity expression. Subsequent fermentation occurs in stainless steel tanks, under precise temperature control at 16ºC.
View: Reveals a very delicate pink tone, nuanced by violet reflections, denoting finesse and elegance.
Aromas: Awakens the senses with captivating aromas of red fruits, complemented by tropical notes that linger over time.
Taste: On the palate, a smooth entry is experienced, culminating in a balance that provides a delightful treat in the finish.
It is recommended to pair with fish or seafood rice dishes, baked fish, pasta, white meats, and salads. The optimal serving temperature ranges between 8 and 10ºC, enhancing its distinctive characteristics.
