Harvest: The harvest is carried out using a combination of manual and mechanical methods. Macabeo grapes are harvested in early September, followed by Xarel·lo in mid-September, and finally, Parellada in the first week of October.
Fermentation: The first fermentation takes place in stainless steel tanks with rigorous temperature control at 14-16ºC. The second fermentation is conducted in the bottle using the Traditional Method.
Aging: Average period of 12 months on its lees.
View: An attractive pale yellow color with greenish highlights.
Aromas: It reveals good aromatic intensity. Notes of white fruits, such as green apple, are harmoniously combined with hints of fresh herbs, like fennel. Additionally, there are intertwining notes of white flowers and citrus.
Taste: It presents itself as a very pleasant, fresh, and flavourful cava. It offers a good carbonic sensation and remarkable persistence, culminating in a very long finish, leaving a lasting impression.
It pairs perfectly with appetizers, seafood, fish, chicken, Asian food, soft cheeses and light desserts, thanks to its freshness and effervescence that enhance and balance the flavours.
