Winter at Vallformosa

In Winter a new cycle begins in the vineyard and in the winery...

In Winter it is supposed to be calm, but the reality is that nothing stops either inside or outside Vallformosa. Our growers are finishing pruning and continue to care for the vineyards while waiting for the first spring shoots, where the first open almond blossoms warn us that a new period is about to begin.

In the cellar, on the one hand, the low temperatures are used to make the cava, with the base wine of the last harvest, thus starting the 2nd fermentation in the bottle; and on the other, the blends continue to be made and the vintage wines are bottled to get home fresh and with the aroma that characterizes them.
