Made respecting tradition and with a single grape variety: Xarel·lo. A cava that is the fruit of more than 150 years of cultivating the land and knowledge of our environment. Alcoholic content: 12% Vol.
Residual sugar: 7,5 g/L
Harvest: the grapes are harvested entirely by hand, specifically the Xarel·lo variety, in mid-September.
Fermentation: 90% of the must undergoes the first fermentation in stainless steel tanks, maintaining a controlled temperature of 16ºC for approximately 15 days. The remaining 10% of the fermentation must completes its process in lightly toasted French oak barrels, where it rests together with its fine lees for three months.
Aging: The cava ages with its lees for a period of more than 30 months.
View: Pale yellow colour, tinged with green glints. The evolution of its bubbles is constant and persistent, of minuscule size, which brings perfection and elegance to the sparkling wine, forming a constant and lively crown.
Aromas: remarkable complexity, with notes of white fruits, such as apple or pear, which blend with the aromas of its ageing process, derived from the second fermentation, giving it an elegant character on the nose. At the same time, citrus and floral fragrances emerge, giving the cava a fresh character.
Taste: fine and silky at the beginning, which gradually transform into a creamy texture that confers longevity in terms of aromas, freshness and flavours that last over time. The aftertaste is long and pleasant, with retronasal aromas of fresh fruit and flowers, accompanied by subtle ageing notes.
The ideal choice to accompany a wide variety of dishes, standing out especially in combinations with seafood, fish, rice and red meat. In addition, its versatility extends to blending with various types of desserts.
