The rediscovery of Sumoll
One of the best kept secrets of the Penedès is rediscovered in a tailor-made landscape. The Sumoll, a variety at risk of extinction, allows itself to be sculpted by the very force of nature.

Alcoholic content: 13,5% Vol.
Residual sugar: 1,6 g/L
Harvest: Grapes are handpicked at the optimal ripeness, typically in mid-September.
Fermentation: Maceration in French oak barrels with daily pump-overs for two weeks, fermentation at 25ºC, and malolactic fermentation in barrels.
Aging: After fermentation, the wine undergoes a one-year aging period in new French oak barrels.
View: A beautiful colour that falls somewhere between garnet and purple, with violet highlights adorning it.
Aromas: Notes of chocolate, red fruits (pomegranate), rose petals, violets, coffee, liquorice, spices, and a touch of wood.
Taste: Balance between fruit and wood, warm sensation, fresh acidity, velvety tannins, balsamic nuances of eucalyptus, with a smooth texture and remarkable length.
Ideal con platos gelatinosos (pies de cerdo, callos), estofados de ternera, mariscos, pescados, caza, aves de corral, y quesos semicurados.
